rinse and strain kelp noodles. place in bowl and massage with baking soda and lemon juice until softened. let sit for about 10 minutes. strain and rinse. place in clean bowl and add sauce of your choice to marinate and infuse the noodles. i use the liquid from gyocha’s lotus root by dave’s gourmet korean food purchased at erewhon which contains low sodium soy, veggie broth, jalepeno, fruit juice. soak for as long as you want. strain (or not) and enjoy with your favorite raw veggies.
