This is step by step recipe on how to make very simple chocolate pudding using home made oat milk. It also includes recipe of oat milk.
After getting this new amazing high tech blender machine from Joyoung, I have been experimenting with various plant based recipes. This blender has a variety of settings for non dairy milks such as aot milk, almond milk, soy milk, rice milk and in addition you can use it for hot soups, juices and smoothies. The best part of it, it cleans and sterilizes itself, how cool is that!
I have decided to experiment with homemade oat milk, which is super easy to make, it only takes a few min. A lot of store bought oat milks include oils, thickeners, sweeteners and flavorings. If you want to be in control, make your own, normally it only includes oats and water, but if you want to add a sweet taste, add some honey or maple syrup and a pinch of salt.
Today, I am making chocolate pudding out of homemade oat milk. This is a very simple dessert, it only takes 12-15 minutes in preparation time including making your own oat milk.
Ingredients ( serving 4 ):
Homemade oat milk – 475 ml ( 2 cups )
To make oat milk I have used:
1 cup of rolled oats
Pinch of salt
Honey – 1 ½ tsp
Salt – ⅛ tsp
Granulated sugar – ⅓ cup
Unsweetened cocoa powder – ⅓ cup
Corn starch – 2 tbsp
Dark chocolate – 100g
Vanilla extract – 1 tsp
For toppings: fruits, berries, crushed nuts and mint.
Preparation steps:
Make homemade oat milk. Blend 1 cup of oats with a pinch of salt and honey. Joyoung automatically controls the amount of water required based on selected volume…which makes it super simple. In a regular blender you would need to add 6 cups of ice cold water. For the purpose of the dessert recipe there is no need to remove pulp. But you can always make milk more smooth by removing pulp using nut milk bags.
In a medium size pan add granulated sugar, cocoa powder, cornstarch and salt. Slowly pour oat milk into the pan and stir until smooth. Put the pan on the low-medium heat and let it slowly simmer for about 10 minutes until liquid becomes thick. Add chopped dark chocolate on top and let it simmer for another minute or until chocolate melts and is well incorporated in the texture of the pudding. And finally mix in vanilla extract and it is ready.
You can serve it warm or cold with toppings.
