All of my loves of being package free, making a bomb mayo, and being vegan come together in this awesome mayo recipe. Just in time for BBQ season! Recipe below:
1:03 What is aquafaba?
1/2 cup aquafaba (water from chickpeas)
1 cup unsalted cashews, soaked in hot water for 30 minutes and then rinsed and drained
3 Tablespoons fresh squeezed lemon juice
2 Tablespoons water
1 Tablespoon apple cider vinegar
1 1/2 teaspoons yellow mustard
1/4 teaspoon sea salt
Generous pinch of black pepper
You’ll need a high speed blender/Vitamix.
3:49 Add aquafaba to blender and blend on high for at least 1 minute, or until frothy and thick.
4:05 Add remaining ingredients and blend on high until smooth.
4:36 Transfer to a jar and store in the fridge.
