RECIPES
**FRUITY CRUNCH BOWL**
50g Oats
1 TBSP Mixed Seeds
1/4 TSP Coconut Essence
1 Medium Banana
1/2 Mango
4 Strawberries
10 Blueberries
1/2 TBSP Maple Syrup
METHOD
Mix the oats, seeds and Coconut essence together.
Add them to a small pan (med-high heat), and toast for a few mins.
Mix oats with Maple Syrup and the fruits (chopped up). Serve!
**LENTIL FLATBREAD**
130g red dry Lentils
350ml cold water
METHOD
Soak the lentils in the water for 3 hours.
Blend until smooth.
In a non-stick pan, pour the mixture out and make pancake shape.
Cook for 5-7 minutes each side.
This makes 3 flatbreads.
**CURRIED POTATOES**
1.5 kg Potatoes (I used Maris Piper) – pre-steamed and chopped into quarters.
1 large Red Onion, chopped
2 Garlic Clove, minced
15g fresh Ginger, grated (about 2 Inch)
400g (1 can) Chopped Tomatoes
50ml Plant Milk
1 TBSP Cumin
1 TBSP Turmeric
2 TBSP Curry Leaves
1/2 – 1 TSP Crushed Chilli Flakes
2-3 TBSP Fresh Coriander, chopped (Cilantro)
1-2 TBSP Maple Syrup
METHOD
Preheat a large pan, medium-high heat.
Add the chopped tomatoes to the pan.
Add the Cumin, Turmeric, grated Ginger, minced Garlic, Chili Flakes. Mix well. Cook 5 minutes (add a splash of water if getting dry).
Add Curry leaves and half of the fresh Coriander.
Add the Potatoes and Plant Milk, and mix through.
Cover, and cook for around 30 minutes, stirring occasionally so they don’t stick.
To serve, drizzle maple syrup and add the remaining coriander and steamed greens such as Broccoli.
