When was the last time we made a video on what we eat in a day? It feels like it’s been forever! We have been perfecting some dope recipes that we eat all the time that are simple enough for our van life set up. Here is everything we ate in a day while living in a van in Mexico.
VEGAN RECIPES:
Lentil Taco “Meat”
Ingredients:
– 1 cup lentils (green or red, green will make it crunchier while red will be more mashed, we love both)
– 2-3 cups veggie broth, or water with veggie bullion cubes/paste (2 for red lentils, 3 for green)
– 1 white onion, chopped
– 2 tsp. chili powder
– 1 tsp. paprika
– 1/2 tsp. smoked paprika (optional)
– 1/2 tsp. cayenne pepper
– 1 tsp. salt
– 1/2 tsp. garlic salt
Directions:
Combine the lentils and veggie broth in a pot. Cook on medium high heat until all liquid has cooked into the lentils.
Sautee the onion. Once it is translucent, add the cooked lentils and all the spices. Cook on medium low heat for 5 minutes.
Alfredo Sauce for Pasta
Ingredients:
– 1 white onion, chopped
– 6-10 cloves of garlic (less if the garlic is more fresh)
– 1 tbls. of vegan butter or olive oil
– 1 cup of cashews
– 1/2 cup of nutritional yeast
– 1 1/2 cups of veggie broth (or water with veggie bullion cubes/paste)
– Salt and Pepper to taste
Directions:
Sautee the onion and whole cloves of garlic in the butter or olive oil. Once the garlic begins to get a little bit golden, remove the onion and garlic from the stove. Combine everything in your blender. (Side note: if your blender is powerful, like the Vitamix, you can use fresh cashews. If not, I’d recommend boiling them for 10 minutes beforehand.) Add the sauce to your pasta!
