Today I am excited to share with you another video on some of my favorite easy vegan meals I am currently eating for maximum weight loss on a whole food plant based diet. These meals are also oil free as always. Some of you may be familiar with Dr. McDougall and his books, The Starch Solution and The Program for Maximum Weight Loss where he recommends cutting out all fat during weight loss, but I just want to point out that I have always included a little fat in my meals for my health and over all satisfaction. You can obviously omit if you’d prefer.

✨ Recipes in video –
Blueberry oats:
3/4 c rolled oats
1.5 c water
1/2 banana
frozen blueberries
bring to a boil and mash banana for sweetness
For toppings add defrosted blueberries and peanut butter sauce (1tsp peanut butter, 1-2 tbsp pb2, water)
Fries:
2 large Yukon gold potatoes
slice into even fries
toss in salt and nutritional yeast (link above)
space evenly on non stick cookie sheet
bake 400 degrees 15-20 mins or until crispy
(For extra crisp – soak raw potatoes in hot water for 10 mins before cooking).
Mexican Quinoa:
4 c water
1 can fire roasted tomatoes
1 can black beans
2 c quinoa
1 c onions
1 c corn
2 c bell peppers
8 oz salsa or taco sauce – sometimes I used 1 entire jar of salsa
1 tsp garlic powder
2 tsp chili powder (or more)
Cook on high pressure in Instant Pot – manual release
