๐น 1 large yellow onion, chopped
๐น 4 garlic cloves, chopped
๐น 1 green bell pepper, chopped
๐น 2 to 3 carrots, peeled and chopped
๐น 1 15-oz can diced tomato
๐น 2 cups water
๐น 1 dry bay leaf
๐น 1 1/2 tsp ground cumin
๐น 1 tsp dry oregano
๐น 1/2 tsp paprika
๐น Kosher salt and black pepper
๐น 1/2 tsp red pepper flakes, optional
๐น 2 15-oz cans black eyed peas, drained and rinsed
