VEGAN CHRISTMAS GINGER COOKIES (toddler baking!) 🍪 Healthy, oil free, whole food and weight loss style!!
So I have been craving ginger cookies recently and I couldn’t find ANY fat free healthy vegan recipes out there, so I decided to made my own! And boy did they hit the spot 😆
Plus it’s a great activity with your babies – Romi insisted she wanted to be in the video!
Ingredients:
10 medjool dates
1 big thumb of ginger
1 tsp cinnamon
1 tsp vanilla extract
1/2 tsp nutmeg
1 whole clove (or 1/8 tsp clove powder)
1 tbsp blackstrap molasses
2/3 cup boiling water
1/4 tsp bicarb soda
Pinch of salt
1.5 cups rice flour
Add dates, ginger, cinnamon, nutmeg, cloves, vanilla, molasses and boiling water to a blender and blitz until smooth.
Add the date mix to a bowl and add the rice flour, bicarbonate soda and a pinch of salt. Mix well!
Now you could try rolling the mix out but i took the easy way! I added 1 heaped tablespoons of the mix to a round mold and flattened it out. Repeat until all the mix has been used.
Bake in the oven for 10-12 minutes and let cool before you dive in. Enjoy!
