Japanese salad
Ingredients
3 cups lettuce leaves
1 cup orange segments
1 cup papaya balls
½ cup sweet lime segments
½ cup diced cucumber
2tbsp Cranberry’s
Herbed cheese dressing
Ingredients
¾ cup grated tofu
2 tbsp plant based curd
2 tbsp chopped parsley
1 tbsp chopped fresh dill
½ teaspoon salt
Method
1. Mix all the ingredients in a blender. If you find the mixture too thick, add some curd
2. Store in the refrigerator and use within 12 hours.
Serve cold.
Salad
Method
1. While peeling, handle sweet lime and oranges carefully so that the segments are not mashed.
2. Break the lettuce leaves into bite size pieces. Do not cut with a knife. Keep in ice-cold water for over 10 minutes. Then shake off all the extra water.
3. Mix the broken lettuce leaves, orange and sweet lime segments cranberry’s and diced cucumber and put in the refrigerator.
4. Just before serving, add the dressing and toss.
