Welcome to The Bengal’s Kitchen. In today’s video, we’re bringing you a mouth-watering Tandoori Mushroom recipe that’s perfect for all the food lovers out there. Tandoori dishes are renowned for their smoky, charred goodness, and this recipe is no exception. Plus, Mushrooms are usually a great source of high protein, fiber, antioxidants, lots of vitamins and minerals.
It’s really not difficult to make Tandoori Mushrooms at home. Watch us take fresh mushrooms, marinate them in a rich blend of flavourful Indian spices and then just bake them!
Here’s a quick overview of what you’ll learn in this video –
Ingredients:
• Fresh Mushrooms – 200g
• Yogurt – ½ cup
• Black Peppercorn – 1 tsp
• Coriander Seeds – 1 tsp
• Cardamom – 4
• Cloves – 4 – 5
• Fennel Seeds – 1 tsp
• Cumin Seeds – 1 tsp
• Black Cardamom – 1
• Nutmeg – ¼
• Mace / Javitri – ½
• Dry Red Chilli – 2
• Cinnamon – 2-3 sticks
• Fenugreek / Kasuri methi – ½ tsp
• Kashmiri Red Chilli Powder – 1 tbsp (Optional just for colour)
• Jaljeera – 1 tsp
• Ginger-Garlic Paste – ½ tbsp.
• Amchur Powder – 1 tsp
• Lemon Juice – ½
• Salt as per taste
• Butter – 1 tbsp
Follow the steps below:
Preparing the Tandoori Masala:
1. In a pan, add all the whole spices which includes – black peppercorn, coriander seeds, cardamom, black cardamom, cloves, fennel seeds, cumin seeds, nutmeg, dry red chillies, mace, cinnamon, and fenugreek.
2. Dry roast all these spices for a minute or two until they start crackling.
3. Now once the spices come to the room temperature, put them into a mixer grinder and make a fine powder. Our homemade tandoori masala mix is now ready.
Preparing the marination:
1. Take around 200 g of fresh mushrooms, rinse them thoroughly and wipe them to dry.
2. In a bowl, take ½ cup fresh yogurt, add the tandoori masala mix along with Kashmiri red chilli powder, jaljeera, ginger garlic paste, amchur powder, lemon juice and salt to taste.
3. Give everything a well mix. And them add the mushrooms and combine everything evenly.
4. Refrigerate the marinated Mushrooms for 20 minutes
Grilling the Mushrooms:
1. Now the final part! Pre-heat your oven in 200°C for 10 minutes.
2. Thread the mushrooms into the grilling skewers (3 – 4 in each skewer) and grill them for 15 minutes under 200°C.
3. Our tender and spicy Tandoori Mushrooms will be ready! Serve hot with your favourite dip!
