Ingredients:
#1 Red Bean Burgers
→ makes 6-8 burgers, depending on the size
1 can kidney beans
⅓ cup walnuts, 40g
1 onion
1 clove of garlic
1 tsp of olive oil to fry the onion/garlic (or use water)
½ cup + 1 tbsp oats, rolled (65g)
2 tsp tahini
2 tsp oregano, dried
1 tbsp soy sauce
1 tsp mustard
salt to taste, if needed
extra olive oil if you choose to fry the burgers
#2 Creamy Dill + Cucumber Potato Salad
850g potatoes (30 oz)
1 small red onion
1 celery stalk
½ cucumber
a handful of fresh dill
¼ cup pickles, chopped
a handful of fresh chives, parsley, basil etc.
For the dressing:
½ cup vegan soy yogurt, unsweetened (125ml)
1 ½ tbsp vegan mayo
1 tsp mustard
¼ tsp smoked paprika
salt, pepper to taste
juice of ½ lemon, or more to taste
1 tsp agave, if needed (optional)
→ yields 1 big bowl of vegan potato salad, serves 4 as a main, 6 as a side
#3 Mushroom Teriyaki Bowls
→ serves 4 bowls
250g cremini mushrooms = 8,8 oz
1 clove garlic
1 tsp minced ginger
juice of half a lemon
¼ cup tamari
⅓ cup water
2 tsp cornstarch + 1 ½ tbsp water
2 ½ tbsp raw sugar
1 tsp oil to sear the mushrooms
For the bowls:
grain of choice (rice, bulgur, rice noodles…)
greens
avocado
cucumber
hummus
lime juice
sesame seeds, spring onion …
