INGREDIENTS
#1 Roasted Cauliflower Peanut Bowl
1 head of cauliflower, cut into florets
a pinch of salt
1 tbsp oil
½ tsp smoked paprika
¼ tsp cumin
sauce:
2-3 tbsp peanut butter
1 onion
1 clove garlic
1 tiny piece of ginger, about 1 inch, 2.5cm
1 tsp oil to sautée
juice of ½ lemon
½ cup non dairy milk, unsweetened (125ml)
salt, pepper to taste
cooked starch of choice
I made a small mistake in the video by saying double the amount of water, I meant to say the same amount of water, volume wise. SO:
1 cup couscous, dried (~180g)
1 cup hot boiling water (250ml)
1 tsp vegetable broth powder
toppings: avocado, cherry tomatoes, pickled onions, etc.
→ serves 2
#2 Loaded BBQ Lentil Tortillas
2 big tortillas, whole wheat or corn or regular, cut into pieces

OR 1 can of vegan lentil stew + 1 tsp smoked paprika + 1 tbsp BBQ sauce
avocado
bell pepper
vegan mayo or hummus
spring onion
fresh herbs
→ serves 2
#3 Roasted Sweet Potato with Pickled Onions
Onions:
3-4 red onions or shallots
¾ cup apple cider vinegar or white wine vinegar (180ml)
1 tsp salt
1 Tbsp + 1 tsp sugar
Dressing:
1 tsp mustard
1 tbsp olive oil or oat cream
1 tbsp white wine vinegar
1-2 tbsp non dairy milk
1 tsp date, rice, agave, maple – syrup
salt, pepper to taste
fresh or dried dill, optional
a few handfuls of greens
2 sweet potatoes, roasted at 190 C for 45 min to an hour
extra lemon juice, optional
hummus
avocado
chia seeds, fresh herbs
→ serves 2
#4 Sunflower Spinach Pesto Noodles w Vegan Cream Cheese
Vegan Tofu Cashew Cheese:
¾ cup cashews, boiled for ~40 min (115g)
1 block of firm tofu, plain (200g) (7oz)
juice of 1/2 lemon, more if needed
2 tbsp white wine vinegar
2 tsp olive oil
salt to taste
Sunflower Spinach Pesto
⅔ cup sunflower seeds (90g), roasted
1 pot of basil leaves
2 handfuls of fresh baby spinach
juice of 1 lemon, more if needed
1 clove of garlic
3 tbsp vegan cream or non dairy milk
2 1/2 tbsp olive oil
1 tsp date syrup
generous pinch of salt
a handful of cherry tomatoes, cut in half
100g – 200g rice noodles (3.5 – 7oz)
→ serves 2
