RECIPES:
Easy green smoothie:
1 ripe banana
1 Tbsp hemp seeds
2 Tbsp ground flax seeds
3 large handfuls baby spinach
2 cups frozen mango
fresh OJ (or plant milk)
BLEND and serve
AVOCADO TOAST
toasted sourdough bread
then add mashed avocado
spinkle salt, pepper, and garlic powder to taste
top with purple sauerkraut
CREAMY RAMEN NOODLE BOWL
4-5 rice ramen noodle cakes, cooked according to package instructions
sauté your favorite veggies in veggie broth like:
broccoli
bell pepper
carrots
mushrooms
onion
after the veggies cook down (about 5 minutes) add:
2 Tbsp coconut aminos or soy sauce
splash of rice vinegar (about 1 tsp)
2-3 Tbsp tahini
1 tbsp maple syrup
more veggie broth (about 1 cup)
1/2 c purple sauerkraut or vegan kimchi (pieces and juice)
saute for a few more minutes until everything is cooked down and saucy.
mix together with cooked and drain noodles.
top with your favorite toppings like:
drained/rinsed garbanzo beans
baked tofu
tomatoes
green onion
sesame seeds
cilantro
sriracha
serve and enjoy
BURRITO BOWL
lettuce greens with lemon juice squeezed on top
basmati rice
your favorite beans (rinsed, drained and heated for 5 or more minutes. add spices and veggie broth if desired)
sautéed mushrooms, garlic, and onions (I sautéed the veggies in veggie broth and added salt and pepper)
your favorite jarred salsa
guacamole
Serve all together and devour
