VEGAN WEIGHT LOSS HACKS
SECRETS TO STAY FIT WHILE TRAVELING
BREAKFAST SMOOTHIE BOWL
makes 2 servings
1 ripe banana
1 cup frozen berries
1 1/2 cup non-dairy milk
2 cups raw kale or spinach
1/2 teaspoon cinnamon
1 pitted date, optional
toppings: blueberries, sliced banana, granola, cacao nibs, matcha powder
Place the smoothie ingredients into your Nutribullet Balance Smart Blender, and blend until smooth.
Pour the smoothie into two bowls, and top each with berries, banana, granola, cacao nibs, and matcha powder.
SHAVED KALE BRUSSELS SPROUTS SALAD
makes 2 servings
1/2 bunch kale (about 4 cups), very thinly sliced
1 1/2 cups raw brussels sprouts, shave with a mandolin or thinly slice
2 tablespoons extra virgin olive oil
1 teaspoon pomegranate molasses
2 tablespoons lemon juice
1 teaspoon maple syrup
1/2 teaspoon cumin powder
1 teaspoon aleppo pepper, optional
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup beans (any kind)
1 cup cornbread croutons, or other croutons
1/4 cup toasted pumpkin seeds
Place the kale and brussels sprouts into a mixing bowl. Add the olive oil, pomegranate molasses, lemon, maple syrup, cumin, aleppo pepper, salt, and black pepper. Use your hands to massage the ingredients into the veggies. Massage until the kale is tender, about 3 minutes.
Top with beans, croutons, and pumpkin seeds.
Serve.
