Today I am showing you guys two SUPER easy and delicious vegan meals that are perfect for lunch or dinner! You can also make a large bath for a weekly meal prep :). I also talk about how I am apparently a runner now (?) and what workouts I do to supplement my running! I hope you guys enjoy this video!
RECIPES (including the modifications I made) :
Curry Sweet Potato, Tofu & Spinach:
2 cups spinach leaves
1 sweet potato, chopped
6 oz. smoked tofu, cubed
1 tbsp olive oil
1-2 tsp curry powder (or sub 1-2 tbsp curry paste)
2 tbsp coconut milk
Boil the sweet potato cubes until cooked. You should be able to pierce a piece easily with a fork. Heat the oil in a large frying pan on medium heat. Add the tofu and sweet potato cubes and saute for a few minutes. Add the curry powder and coconut milk (or curry paste if using) and stir to combine. Add the spinach and cook 5 minutes or until it is wilted. Enjoy!
Creamy Lentil Pasta:
4 oz. pasta
1/2 tsp oregano
1/4 tsp black pepper
1/2 white onion, chopped
1/4 cup vegetable broth
1 cup red lentils, cooked
1 tbsp olive oil
1 1/2 cups tomato sauce
1/4 to 1/2 tsp salt
1 tsp sugar
Cook the lentils according to the package. Set aside. Cook pasta according to the package. Drain and set aside. In a frying pan on medium heat, cook the onion in the olive oil until onion becomes translucent. Add the spices, vegetable broth, tomato sauce, sugar, and lentils. Simmer for about 15 minutes, stirring to ensure it doesn’t stick to the pan. Serve the sauce over the pasta!
