Danish foodtech company Nutrumami has announced a rebrand to SUMM Ingredients. The new name reflects the company’s ambition to “sum
up” multiple functions in one ingredient, along with delivering a greater sum of impact in terms of health, sustainability, and taste.
SUMM Ingredients has also just raised €1.7 million in funding, with EIFO and BoxOne joining existing investors Kost Capital and Planetary Impact Ventures. The capital will be used to accelerate the production and commercial rollout of the company’s first multifunctional ingredient, FermiPro®, which is expected to launch this autumn.
FermiPro® is a fermented protein that is said to deliver the complex umami flavor and depth often found in meat-based dishes. It is claimed to build texture naturally, with no need for gums, starches, or additives. The ingredient also reduces the need for flavorings, texturizers, and E-numbers, and contains minerals and B-vitamins for a more complete nutritional profile. According to SUMM Ingredients, it enables greater use of legumes while supporting the development of cleaner plant-based and hybrid products.
The company has also just expanded its leadership team, appointing Kasper Bus as its new Chief Commercial Officer. Bus has international experience in the food and beverage industry, having previously held senior roles at AAK, IMCD, Barry Callebaut, and Kohberg.
“A new ingredient category”
SUMM Ingredients is building its innovations on a proprietary cross-fermentation platform, using a process that harnesses the effects of multiple microorganisms applied to diverse plant raw materials. The technology could reportedly enable the development of a variety of multifunctional ingredients, including cultured plant-based cheese, hybrid meat, bouillons, seasonings, and snacks.
As well as FermiPro®, SUMM Ingredients says it is developing a second multifunctional ingredient focused on sugar reduction and mouthfeel. The company previously secured €450,000 in pre-seed funding last year, with the aim of creating multifunctional plant proteins.
