CHEESY SHREDDED OYSTER MUSHROOM SPAGHETTI
Oyster mushrooms make the best fake shredded vegan “chicken”, see our prep [Turn mushrooms into chicken video] for a how to shred. This dish can be done in 15 minutes, also used pre-cooked spaghetti[Meal prep hack], perfect Friday night fast food!Another prep was the air fried char grilled red capsicum (8-10 minutes on high) sprayed with avocado oil. Blew me away how good they turned out. All the ingredients can be part of weekly meal prep, including the shredded mushrooms, which we air fried first & stored in fridge. Don’t prep meals…prep ingredients with bonus of turning your carbs into resistant starch(much healthier). So instead of take away throw a pasta or rice or potato meal together in less time than Uber Eats!!
INGREDIENTS
SHREDDED OYSTER MUSHROOMS
* 6 King oyster mushrooms-shredded & seasoned
* 1 tsp salt
* 1/2 tsp pepper
* 2 tsp garlic powder
* 1 tsp chicken stock(vegan)
* 2 tsp tamari or soy
* Avocado oil(to cover)
METHOD
* Top & tail mushrooms
* Shred rest with fork
* Place in large bowl
* Spray oil to coat
* Add remaining ingredients
* Shake/mix to coat
* Air fry on 200(highest) for 10-15 minutes
* Shake half way
* Adjust to liking more for crispy
TOMATO SAUCE
* Olive oil for frying
* 400g cherry tomatoes [whole]
* 4 cloves garlic-minced
* 1 red capsicum-char grilled in air fryer-sliced
* 1/2 cup black olives[pitted]
* 1-2 tsp Portuguese chicken blend(vegan)
OR substitute with Piri Piri, or paprika, salt, pepper, chilli fresh or flakes, 1/2 tsp lime zest(squeeze at end)
* 1/2-1 cup grated vegan cheese(or just NOOCH)
* 1/4 cup water -if needed to stop sauce drying out.
* Cooked spaghetti [serving 4]
METHOD
* Prep mushrooms as above.
* Prep red capsicum [air fryer] for char grill or just sauté as is.
* Sauté garlic, capsicum-2 minutes.
* Stir thru shredded mushrooms.
* Drop in olives.
* Add Portuguese seasoning.
* Pour in tomatoes.
* Stir thru-5 minutes.
* Or until softened.
* Add water if needed.
* Mix cooked spaghetti.
* Sprinkle grated cheese.
* Cover with lid -3 minutes
* Or until melted.
